With a mom who bakes as well as mine does, it’s hard not to pick up a few skills from her. From her shortbread cookies to chocolate cake, nothing of mine or anyone else’s for that matter ever compares! I do have one competitive bakers edge over my mom and it is this apple crumble recipe. Now that it’s out I guess I’ll lose my edge, but its just too delicious a recipe not to share with you!
What you will need:
Filling
6 small apples, cubed
1 tsp cinnamon
1 tsp brown sugar
Topping
1 tsp cinnamon
1 1/2 tbsp brown sugar
1 tbsp flour
1/4 cup butter
1 1/2 cup quick oats
Directions:
Preheat oven to 350 degrees. In a fairly small non-stick baking dish spread the apples evenly along the bottom. Sprinkle the cinnamon and 1/2 tbsp of brown sugar over the apples.
In a separate, microwave-safe bowl, partially melt 1/4 cup of butter. Add the flour, quick oats and brown sugar to the butter. Mix together lightly.
Once the butter has been absorbed by the oats and flour, crumble over top of the apple mixture. (Tip: If the oats look a little dry, you can always add a smidgen of water). Place in oven for 40-45 minutes, or until topping is golden brown and apples are soft.
Oh….and don’t forget the vanilla ice cream on top!
